There are two types you can select from: softneck and hardneck. 

Softneck Garlic

Softneck garlic is the type of garlic you typically see in the grocery store. Softneck varieties are easy to grow and may store for up to 12 months. These are large bulbs covered with papery skin, which makes them a little harder to peel. Softneck garlic is mild in flavour and the soft, pliable stems allow it to be braided so that you can hang them from the ceiling to dry. Each bulb produces 20 cloves on average.

 

Hardneck Garlic

Hardneck garlic generally produces larger cloves than softneck varieties. Hardneck garlic is also much stronger in flavour. They are easier to peel because they don’t have as much protective papery skin; however, this also means they don’t store as long. Each bulb will produce six to eight cloves.
